The foraging bartender
The foraging bartender
Since the dawn of time, we humans have been foraging. Going out in the forest collecting plants to eat has for many of us gone from being something crucial for our very existence to being more of a hobby. Add a splash of spirits, some perfected Italian taste buds and you have Bella Porcile, the foraging bartender.

“I’ve always been told I´m a witch”
The foraging lifestyle has been passed on for generations and her Italian dad always took her out in the woods as a child and introduced her to the edible goods of the forest. The taste of nature has later become the inspiration of all the mouth-watering drinks Bella creates.
– I’ve always been told that I am a witch, because I always create all these different mixtures from what I find, Bella says.
Besides being a spirits-magician she is also a jewelry designer, which explains her eye-catching drinks. When you get a drink made by Bella it should not just be liquid in a glass. She tells us she wants to create a wow-moment and an experience with the drinks she makes.

BELLAS BURNING PINECONE DRINK
This is a simplified version of an Old Fashioned but with a nordic twist. With this one you should get the feeling of being in the forest sitting around the bonfire. Enjoy!
Ingredients
6 cl Bourbon
2 cl Pine syrup
Ice
Pinecone
Pine twig
Dry a pinecone in the oven for a while then put it in the drink on top of an ice cube and light it on fire. Decorate with a pine twig!
How to make your own pine syrup:
1. Pick small pine and fir twigs
2. Take 3 dl water and 3 dl sugar and bring to the boil
3. Add the twigs and let it simmer for about 30 minutes
4. Take it off the stove and let it sit for 24 hours with the lid on
5. Strain the syrup into a bottle
Voila! Now you have pine syrup
